I was searcing in the internet for a supplement, when I accidentally discovered an interesting page with recipes !!! I used the google translator and…Wow !!! Coconut macaron !!!The recipe is by Sarah Caruntu, food blogger, who posted it on her blog: www.dolceappetit-blog.com/rețete/coconut-macarons
For a healthier result, you can replace the following ingredients with organic products!!!
-30 gr sugar
-15 ml water
-35 gr coconut flakes
-250 gr white chocolate
-120 gr liquid cream
-150 gr almond flour
-150 gr powdered sugar
-10 gr coconut extract
-4 egg whites
– a pinch of salt
-150 gr sugar
-40 ml water
In a small pan put 30 g of sugar with 15 ml of water. When the sugar starts to melt, add the coconut flakes and stir until golden brown / caramelized.
In a bowl, melt the white chocolate together with the liquid cream, add the caramelized coconut flakes and mix well.
In a bowl place the almond flour together with the powder sugar and coconut extract and mix well.
Beat the 2 egg whites until foamy and then pour them over the flour mixture.
Place the 150 g of sugar in a saucepan together with 40 ml of water and leave until they boil. Beat the other 2 egg whites with a little salt in the bowl of a mixer. When the egg whites are well beaten, add the sugar from the pot and continue to stir until it thickens.
Pour the meringue over the almond flour mixture and mix well with a spatula until the dough is soft and sticky.
Using a spatula, form the macarons in the pan on baking paper. Let the macarons dry and put the pan in the oven for 20 minutes at 150 degrees.
Once cool, you can fill them with white chocolate cream and coconut flakes.
